
No, I’m not changing from “Simply Engagement” to “Simply Chef” BUT I’m thinking that sharing my journey with you will hold me more accountable for what I’m eating! I am sharing what I’ve eaten this week (week 1) and my tips and meal ideas! & really this post should be titled “Whole30ish”….I want to make better choices that I can live with for a longer period of time. More like a lifestyle change than a weightless program. I must also preface with the fact that I am still breastfeeding so ….technically I just want to eat better 🙂 I am not being too hard on myself. I’m definitely still up for grabbing a lunch/dinner out, I am just going to try making better choices! I will share ALL of what I eat (even when I don’t eat whole 30). This way you can see the full results of exactly what I have done! First, here are the rules I’m TRYING <–key word! to follow:


Breakfast: Banana & coffee with unsweetened almond milk. I must admit I did put a little caramel drizzle in it —oops.
Lunch: Zaxby’s –YES…Zaxbys!! Even though I’m a sucker for the Big Zax Snack, I indulged in the grilled chicken salad (no cheese, no bread) & homemade whole 30 ranch dressing at home. So I got my Zaxby’s fix—just a little different today.
Snack: Okay…I caved and tried the Daily Harvest smoothies. In my defense…it was only $25 for 6 cups. I just couldn’t pass it up & they are so convenient and good. I mix mine with unsweetened almond milk. You can try it for $25 by clicking HERE! These are pre-packaged smoothies that are ready to throw in my blender. I just add the almond milk and they are ready to go. Today I had the Cacao + Avocado smoothie made with zucchini, pumpkin seed, dates, avocado, coconut, cacao, pea protein, cacao nibs, and himalayan sea salt. Heaven in a glass!
Dinner: Coconut Curry Chicken Meatballs This was surprisingly quick and easy to make! Also, delicious & hubby approved! I served it over cauliflower rice, which I bought in the Steam Fresh bags (cooks in 4 minutes!).
Dessert: Can’t skip this. Raspberries! Simple…and yummy. I usually enjoy dessert when Owen goes to bed 🙂 5 minutes of alone time…just me and my raspberries–it’s the little things right?!

Breakfast: Banana, avocado, scrambled eggs, shredded potatoes, & my coffee.
Lunch: I had lunch out at Chicken Salad Chick with a friend! I made some healthy choices like fruit and water, but caved and had my fave Cranberry Kelly chicken salad.
Dinner: Today I baked Tilapia with Mrs. Dash seasoning (400* for 15 minutes) and steam fresh spaghetti squash with corn. I put olive oil & salt on the spaghetti squash to help with flavor. Turned out great and was very filling!!
Dessert: Fried Bananas with cinnamon and nutmeg sprinkled over 🙂

Breakfast: 3 scrambled eggs, avocado, shredded potatoes
Lunch: Baked chicken tossed in salad with whole 30 ranch dressing
Snack: NONE 🙂 —>We were busy today with Doctors appointments and picking out stone for our future patio-(so excited about it!!)
Dinner: The best Salad ever! Greens, strawberries, pineapple, blueberries, and poppyseed dressing. –YUM– oh…& it had baked chicken in it again.
I did have my lactation cookies before bed because I’m worried about my supply dropping! No problems yet though—making plenty of milk for my baby!! —5 pounds down since Day 1!! Wooohoooo.
*No walk today 🙁 The weather was pretty bad*

Breakfast: I am definitely a creature of habit! Same breakfast…different day! I am planning on prepping a Whole 30 Breakfast Casserole sometime soon to freeze and have throughout the week.
Lunch: For lunch my husband (BTW…he’s down TEN lbs since Monday!! What!?) grilled us some chicken and sizzled up some onions and peppers with a few spices!
Snack: Peach slices and banana
Dinner: Frozen Turkey meatballs was supposed to be my complete dinner..but I got a little hungry later and put together some turkey lunch meat, avocado, and tomato.
Dessert: Fried banana 🙂

Breakfast: I got up early this morning and was finally able to make my breakfast casserole! It took me about 30-40 minutes to make and has so many great ingredients like spinach, tomatoes, eggs, and more. It was delicious 🙂 I also had a banana and my coffee.
Lunch: Frozen Turkey burger with a tomato and shredded potatoes
Snack: Daily Harvest Smoothie!
Dinner: Left over chicken, peppers, & onions from yesterday

Breakfast: Breakfast Casserole that I made yesterday along with some shredded potatoes banana, & my coffee.
Lunch: NONE…I know this is a no-no but we had company and were out longer than planned!
Snack: Banana
Dinner: We grabbed dinner early today since I skipped lunch…was STARVING. I had Zaxby’s salad to make up for it! haha….no cheese and my own whole 30 ranch 🙂

I ate my little bag of lactation cookies before bed as well!

Breakfast: My breakfast Casserole and potatoes again…I’m telling you…creature of habit! But it works & is easy!! + my coffee of course.
Lunch: Turkey burger 🙂 and banana
Dinner: Coconut Lime Skillet Chicken –I’ve been wanting to make this ALL week and finally got the time!
